CHOCOLATE SATIN MOON CAKE
Just for you for Valentine's Day
½ pound of butter, cut into small pieces
12 ounces bittersweet chocolate, cut into small pieces
6 eggs
1 cup of White sugar
1. Place rack in center of oven and preheat the oven to 350°
2. Butter a 9 inch round cake pan. Line it with parchment and butter
again.
3. In a microwave or double boiler melt butter and chocolate. Melt
stirring occasionally.
4. Wisk eggs and sugar in a bowl then thoroughly wisk in melted
chocolate/butter mixture.
5. Pour mixture into the prepared cake pan. Carefully place it into
a larger baking pan on the center rack in the oven and fill the
pan 1/2 of the way with warm water.
6. Tightly cover and tent with foil
7. Bake 1 hour and 15 minutes until cake appears firm and is clean
to the touch.
8. Remove the cake from the water bath and cool completely. The
top will be cratered like the moon.
9. Decorate with fresh strawberries
10. For even more decadence serve with whipped cream or custard
sauce and berries.
