HEART GOLD COOKIES
(Oatmeal Shortbread)
½ cup walnuts
2 C oats
1 ½ C flour (whole wheat or ½ and ½ mix)
½ t salt
1 t baking soda
1C butter (or margarine)
½ c sugar
¾ c brown sugar
1 egg
½ t vanilla
½ t almond extract
1. Preheat
oven to 350°, grease-baking sheet.
2. Pulse nuts in a food processor until finely chopped.
Add oats and pulse 3 seconds. Remove
to a bowl.
3. Mix flour, salt and soda ( pulse 3 seconds)
4. Cut butter into 1 inch cubes- add to work bowl with both
sugars.
Process 10 pulses, then cream.
5. Add egg and extracts. Blend
6. Add flour. Blend
7. Add oat mixture, just mix together.
8. Remove from processor and roll into small (1T) balls. Press
flat with a fork.
9. Bake 8-12 minutes and cool on a wire rack.
