1/4 pound butter
½ cup flour
6 large eggs
1 t baking soda
1 cup milk
1 lb Jack cheese cubed
1 small package cream cheese
2 cups dry cottage cheese or ricotta
1 tsp. baking powder
1/4 tsp. salt
1 tsp. sugar
Optional: 1 cup of ham or seafood
1. Melt butter, add flour. Stir and cook over medium heat until
smooth.
2. Beat eggs, add milk, cheese, baking powder, salt, sugar,
and flour mixture.
3. Pour into a well grease 9x14x2 pan.
4. Sprinkle meat or seafood into batter.
5. Bake uncovered at 350 F for 45 minutes.
Serve warm for brunch, or at room temperature as an appetizer.
Freezes well.
